Sabi is a new destination and the exciting replacement for Amazonia, located within the prestigious DoubleTree by Hilton Hotel in St Pauls Bay. As a dynamic all-year-round operation, SABI features four distinct food and beverage outlets, complemented by a variety of pool areas that provide guests with an unforgettable experience. We are seeking an enthusiastic and experienced Food and Drink Manager who will take pride in leading a diverse team, ensuring exceptional service, and driving the success of SABI’s F&B operations.

Position Summary
The Food and Drink Manager will oversee the day-to-day management of all four outlets, poolside services, and beverage operations, ensuring a high-quality experience for our guests. This role involves strategic planning, hands-on management, staff leadership, and delivering an engaging customer experience in line with DoubleTree by Hilton standards. The position is key to maintaining a vibrant and profitable F&B offering while upholding the brand's reputation for excellence.

Key Responsibilities:

  • Operational Management:

    • Lead the overall operations of the four outlets and poolside service areas, ensuring seamless and efficient service delivery throughout all seasons.

    • Work closely with the Director of SABI Operations to plan and implement strategies that enhance customer satisfaction and revenue growth.

    • Develop and manage the daily, weekly, and seasonal operations plan, adjusting resources as needed to meet business demand.



  • Guest Experience:

    • Ensure the highest standards of food and drink quality, presentation, and service in line with DoubleTree by Hilton brand standards.

    • Monitor guest feedback through online reviews, surveys, and in-person interactions, implementing necessary actions to improve guest satisfaction.

    • Design and implement creative promotions, themed events, and unique experiences to drive guest engagement.



  • Team Leadership:

    • Recruit, train, and manage a diverse team of chefs, servers, bartenders, and other food and beverage staff, fostering a culture of teamwork and excellence.

    • Conduct regular team meetings, briefings, and training sessions to ensure staff are well prepared and motivated to deliver exceptional guest service.

    • Set performance goals for team members, providing coaching and feedback to ensure continual improvement.



  • Financial Oversight:

    • Oversee budget development, cost control, and financial planning to ensure profitability across all outlets.

    • Manage inventory and procurement, maintaining relationships with suppliers and negotiating best prices for quality products.

    • Analyse financial reports to track performance, identify areas of improvement, and initiate cost effective solutions.



  • Compliance and Quality Assurance:

    • Ensure compliance with health, safety, and food hygiene standards at all times.

    • Conduct regular inspections of outlets and pool areas to ensure adherence to DoubleTree by Hilton standards, maintaining high levels of cleanliness and service quality.

    • Work collaboratively with the Culinary team to develop menu concepts that are both innovative and aligned with guest preferences.




Skills and Qualifications:

  • Experience: Minimum of 5 years of experience in food and beverage management, preferably within a hotel or resort environment. Experience managing multiple outlets is highly desirable.

  • Leadership: Proven track record of leading, developing, and motivating teams within a high volume, fast-paced environment.

  • Guest focused: Strong understanding of delivering exceptional guest experiences, with a creative approach to enhancing food and beverage offerings.

  • Financial acumen: Strong financial skills including budget management, cost control, and performance analysis.

  • Communication: Excellent verbal and written communication skills, with the ability to interact effectively with team members, guests, and senior management.

  • Adaptability: Ability to operate effectively in a dynamic, all-year-round environment with seasonal fluctuations in guest volume.
