Join the esteemed team at Rosami Restaurant, our One Michelin Star establishment, as we seek a talented Sous Chef (Fine Dining) to become part of the Xara family. This role offers the opportunity to work at our new historic venue, a beautifully restored 19th-century palazzo, located in the popular Balluta area. This is a unique chance to join the Xara Collection and be part of an exciting new chapter in our culinary journey.
Your Missions
You will assist the Head Chef in the menu creation and updating the existing menu items and assist in the day-to-day operations of the kitchen including orders, inventory and compliance with health and safety regulations.
As a Sous Chef, you will be required to oversee our Rosami Kitchen and to ensure all food preparation and presentation are of the highest quality and comply with the restaurant's standards.
You will have a true desire towards producing authentic and beautifully presented dishes that will amaze our guests and will also be involved in controlling food waste by monitoring potion sizes and presentation..
You will train and mentor and the kitchen members of the team and provide guidance and feedback to the new Chefs whilst keeping on developing the current team. You will also interact with guests and will be the driver for maintaining a positive dining experience for all guests.

About You
- As our ideal candidate, you have a passion for hospitality and a strong background in a fine dining environment with a minimum of 4 years of experience in working in a fine dining environment.
- Strong knowledge of HACCP standards and have qualifications in Food Preparation, Culinary Arts or equivalent.
- Commitment to teamwork and excellent communication skills.
- Ability to work under pressure and leadership abilities in the absence of the Head Chef to supervise the Kitchen brigade.
- Strong knowledge of culinary techniques and practices.
- You have a full awareness of all menu items, their recipes, methods of production and presentation standards and have a strong commitment to excellence.
